White Chocolate Strawberry Scones

I love a good scone and I had this idea to try a white chocolate strawberry scone for a brunch I hosted for Carl’s mom and aunt. Wow! This scone did not disappoint. I couldn’t get over how D to the LISH these were. The tart strawberries with the white chocolate chips were pure heaven. These scones are so moist and are the perfect side to all the savory things you have on your brunch table. They are very easy to mix together and only take 20 minutes in the oven! Pop a bottle of bubbly and pour yourself a mimosa while you savor every bite of these beauties!

Ingredients

  • 2 cups 2 Flour

  • 1/4 cup 1/4 Granulated Sugar

  • 1 Tbsp 1 Baking Powder

  • 1/2 tsp 1/2 Salt

  • 1/2 cup 1/2 Cold Butter, Cubed

  • 1 cup 1 Cubed Strawberries

  • 1/2 cup 1/2 White Chocolate Chips

  • 1 cup 1 Heavy Cream

  • 1 1 Egg

  • *For the Glaze*

  • 1 cup 1 Powdered Sugar

  • 3 Tbsp 3 Freshly Squeezed Lemon Juice

Directions

  • To begin, in a large mixing bowl, add flour, sugar, salt and baking powder. Mix well
  • Cut cold butter into cubes and add to flour mixture. Using a pastry blender or fork, cut butter into flour mixture until it resembles the size of peas
  • In a small mixing bowl, add heavy cream and egg. Whisk to combine
  • Dice strawberries and gently fold in dry ingredients with white chocolate chips
  • Making a well in the center of your flour mixture, add heavy cream and beaten egg. Stir just until combined. Do not over stir
  • Chill dough for at least 30 minutes but up to 3-4 hours. Using a large cookie scoop or measuring cup, drop scone dough onto parchment lined baking sheet.
  • Brush scones with heavy cream and bake in a preheated 400 degree oven for 20 minutes until browned on top
  • Whisk powdered sugar and lemon juice together until it turns to a glaze
  • Remove scones from oven and cool. Once cooled, drizzle glaze on top and serve.
