Curried Cashew Salad

I have the salad of all salads for your holiday tables this year! This salad may be minimal ingredients, but it packs a huge punch of flavor and is the perfect way to kick off your dinner party! The slightly tangy, sweet dressing pairs so well with the curried cashews and the bitter greens. The pear and dried cranberries give this salad that extra sweetness that plays off the cashews so well. Your guests will be asking for seconds and the recipe for sure! Happy Holidays and Enjoy!

Curried Cashew Salad

Ingredients

  • 1 1 Plastic Tub of Mixed Greens(I like the big tub, you may have leftovers, but that’s ok)

  • 1 1 Stalk Celery, Thinly Sliced

  • 1/4-1/3 cup 1/4-1/3 Dried Cranberries

  • 2 2 Pears, Sliced

  • *For the Dressing*

  • 1/3 cup 1/3 Olive Oil

  • 2 Tbsp 2 Champagne Vinegar(Sub White Wine Vinegar if needed)

  • 1 Tbsp 1 Maple Syrup

  • 1/2 Tbsp 1/2 Dijon Mustard

  • 1 1 Clove of Garlic Grated

  • S&P To Taste

  • *For the Curried Cashews*

  • 1 cup 1 Salted Cashews

  • 1 1/2 Tbsp 1 1/2 Butter

  • 1 Tbsp 1 Maple Syrup

  • 1 tsp 1 Minced Fresh Rosemary

  • 1 tsp 1 Curry Powder

  • 1/2 tsp 1/2 Salt

  • 1/4 tsp 1/4 Cayenne Pepper

Directions

  • To begin, in a medium sauté pan on medium heat, toast your cashews for a couple minutes until you release the fragrance.
  • Add butter and maple syrup, stir to coat all cashews. Add remaining spices and stir well to coat.
  • Remove pan from heat and place cashews on a sheet tray or wax paper to cool and dry while you make the salad
  • To make the dressing, place all ingredients in a jar and shake well to emulsify.
  • Line up your salad plates and place greens on each plate with a couple Tbsp of dressing. Massage into the lettuce.
  • Add sliced celery, sliced pears and dried cranberries along with a sprinkle of cashews on the top
  • Serve to your guests and enjoy! (Alternatively, you can make the salad in a large bowl, but for the holidays, I like to serve up individual salads to each guest)

Notes

  • This salad is very easy to make ahead to make it easier on yourself for serving day. You can make ahead the cashews and the dressing along with slicing the celery a day in advance so all you need to do is slice the pear and plate your salad the day of your dinner party!
