Spicy Italian Sausage Tortellini Soup

I love a good soup. I especially love one that is very easy to throw together and loaded with amazing flavors. Every time Carl and I eat this soup, we always say how much we enjoy it and how great the flavors are. The best part about this soup is the limited ingredients coupled with the power packed punch of flavor they provide! You get the spiciness from the sausage coupled with the richness of the tortellini and cream and the acidic kick of the tomatoes. What’s not to love?! Ingredients

  • 1 1 Small Yellow Onion Diced

  • 4 4 Cloves of Garlic Minced

  • 1 lb 1 Spicy Italian Sausage

  • 14 oz 14 Diced Tomatoes

  • 2 Tbsp 2 Tomato Paste

  • 32 oz 32 Chicken Stock

  • 1-2 tsp 1-2 Italian Seasoning

  • S&P to taste

  • 5 oz 5 Baby Spinach

  • 8 oz 8 Refrigerated Tortellini

  • 1 cup 1 Heavy Cream

Directions

  • To begin, add olive oil to dutch oven. Add diced onion and sauté until translucent. Add garlic and sauté until fragrant
  • Add spicy italian sausage and sauté until browned
  • Add diced tomatoes, tomato paste, chicken stock, italian seasoning and S&P. Simmer for 10-15 minutes to incorporate flavors
  • Add tortellini, spinach and heavy cream. Simmer for 5 minutes to cook tortellini and wilt in the spinach. Ladle in bowls and DIVE IN!

Notes

  • If you are not a fan of spice, you can sub mild Italian sausage to cut down the heat
