Bruschetta Crostini’s

Being from a small town in the Midwest, it wasn’t until later in life that I was able to experience the fun flavors of Bruschetta. Funny enough, my first time trying it was at the Olive Garden. I feel like a lot of my recipes are recreations or inspiration from there as I used to frequent the restaurant quite a bit. What I remember from their version of the D to the LISH appetizer, is the cheese. They served it with the addition of cheese in the early days. They changed it later and I always wondered why they would remove the best part! My version has mozzarella cheese with tomatoes, red onion and basil! The combination is colorful and refreshing. A perfect appetizer for an Italian dinner party or a happy hour get together! Throw together a batch today and ENJOY!

Ingredients

  • 1 1 Pint Cherry Tomatoes Diced

  • 1 1 Small Red Onion Diced

  • 1/4-1/2 cup 1/4-1/2 Fresh Basil Chopped

  • 2 2 Cloves Garlic Minced

  • 6 oz 6 Mini Mozzarella Pearls

  • 1/4 cup 1/4 Olive Oil

  • 1 Tbsp 1 Balsamic Vinegar

  • S&P to Taste

  • 1 1 Baguette, baked in oven

Directions

  • To begin, prep tomatoes, onions, garlic and basil by dicing and mincing.
  • Add all prepped ingredients including cheese to bowl and combine olive oil, vinegar and S&P. Stir to incorporate.
  • Slice toasted baguette and top with bruschetta.
