Being from a small town in the Midwest, it wasn’t until later in life that I was able to experience the fun flavors of Bruschetta. Funny enough, my first time trying it was at the Olive Garden. I feel like a lot of my recipes are recreations or inspiration from there as I used to frequent the restaurant quite a bit. What I remember from their version of the D to the LISH appetizer, is the cheese. They served it with the addition of cheese in the early days. They changed it later and I always wondered why they would remove the best part! My version has mozzarella cheese with tomatoes, red onion and basil! The combination is colorful and refreshing.
