Crock Pot Chipotle Chuck Roast Tacos

It’s Taco Tuesday and I have the perfect idea for your busy week! I came up with this super easy recipe that requires minimal ingredients and allows your slow cooker to do all the work! These tacos are super tender and juicy from slow cooking in the chipotle braising liquid all day. The roast falls right apart and makes THE BEST tacos with all your favorite toppings. This is such a fun dinner for the kiddos after a long day at school. Side these fellas with some beans and rice for a full meal!

Ingredients

  • 3-4 lb 3-4 Chuck Roast

  • *For the Marinade*

  • 1 cup 1 Beef Stock

  • 2 2 Large Chipotle Peppers in Adobo

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Onion Powder

  • 1 tsp 1 Salt

  • 2 tsp 2 Oregano

  • Corn or Flour Tortillas

  • Your Favorite Taco Toppings

Directions

  • To begin, add all ingredients for the marinade in a high powered blender and blend until smooth
  • Cut chuck roast into cubes and season with S&P
  • Place beef chunks into crockpot and pour over marinade. Slow cook for 8 hours until chuck roast is fall apart tender
  • Shred beef and build your tacos! Enjoy!
