Crock Pot Maple Dijon Chicken & Potatoes

I have the perfect recipe for you when you don’t have a lot of time to put together dinner in the kitchen after a long day at work! This is limited ingredients, and uses the slow cooker to cook your entire meal! I love a good dump and go dinner and this one checks all the boxes for me. Healthy, full of flavor and very easy! I love the way the chicken cooks up with the maple dijon marinade and the potatoes cook up perfectly perched right on top of the chicken in the crock pot! It’s so easy to prep in the morning! You only need a few minutes to throw everything together and your dinner will be ready to DIVE IN when you get home from work! Pair with your favorite veggie and ENJOY!

Ingredients

  • 4-6 4-6 Bone in Skin on Chicken Thighs

  • *For the Rub*

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Onion Powder

  • 1 tsp 1 Salt

  • 1 tsp 1 Paprika

  • 1/2 tsp 1/2 Pepper

  • *For the Maple Dijon Marinade*

  • 1/4 cup 1/4 Olive Oil

  • 2 Tbsp 2 Dijon Mustard

  • 1 Tbsp 1 Maple Syrup

  • 1 tsp 1 Minced Garlic

  • S&P to taste

  • 1-2 Tbsp 1-2 Fresh Minced Rosemary or Fresh Herbs of Choice

  • 4 4 Medium Russet Potatoes

Directions

  • To begin, mix your rub and season your chicken thighs
  • Mix your marinade and brush on your chicken thighs. Place chicken in crockpot
  • Wrap potato’s in aluminum foil and place on top of chicken
  • Set crockpot to low and cook chicken for 8 hours
  • Remove chicken, brush with remaining marinade and broil for a few minutes until chicken crisps up. Unwrap potato’s and dress with your favorite toppings. Plate your chicken and DIVE IN!
