Crispy Prosciutto, Peach & Burrata Sammie

I love this time of Summer! All the stone fruits are ripe, the herbs are bright and full and I found it the perfect time to whip up a quick sammie for lunch with all of my favorite things! If you are a huge fan of prosciutto, you will love this sandwich! I love it crispy, so I threw it in my skillet to really enhance the flavor. The ripe peaches with the basil vin and burrata were incredible! Topping it with some balsamic glaze was the perfect finishing touch! This would be a great addition to have on your brunch table as well! Give it a try today!

Ingredients

  • 4 4 Ciabatta Rolls

  • 1 1 Package of Prosciutto

  • 2 2 Peaches or Nectarines

  • 4 4 Balls of Burrata

  • Basil Vinaigrette or Fresh Basil Leaves

  • Balsamic Glaze

Directions

  • To begin, place a drizzle of olive oil in your skillet and drop your prosciutto down. Crisp well on both sides. Remove from skillet. Note; you can use prosciutto right from the package without crisping it up if you like it that way
  • To build sammie, place basil vin or basil leaves on bottom, sliced peaches and prosciutto on one half. Burrata and balsamic glaze on one half. Smash together and DIVE IN!!

Notes

  • To make basil vinaigrette; place 1-2 cups packed basil in high powered blender. Add 1/4-1/2 cup olive oil, a couple Tbsp of red wine vinegar, 1-2 cloves of garlic, pinch of salt and red pepper. Blend well. You can add a couple Tbsp of basil vin to some mayo to make a basil aioli as well, which is really good and would be another option for this sammie!
