Peach & Cherry Galette

Stone fruit season is upon us and I am here for it!! I created this incredibly easy and D to the LISH Galette using fresh peaches and sweet cherries. The combo is out of this world! What I love about Galette’s is that they’re so easy to put together. Using only one pie crust and just throwing your filling in the middle, there is no need to get fancy with this rustic style dessert. Any fruit would work in this recipe. Swap blueberries or blackberries for the cherries if you wanted. The sky is the limit! Just a few simple ingredients and you will be diving in before you know it! Grab your favorite ice cream and give this one a try!

Ingredients

  • 1 1 Pillsbury Refrigerated Pie Crust(Or make your own)

  • 4-5 4-5 Small Peaches or Nectarines

  • 2 cups 2 Sweet Cherries

  • 1/3 cup 1/3 Brown Sugar

  • 2 Tbsp 2 Arrowroot Starch or Corn Starch

  • 1 tsp 1 Vanilla Extract

  • 1 1 Small lemon juiced(about 1 Tbsp)

  • Pinch of Cinnamon

  • 1 1 Egg with 1 Tbsp Water whisked together for Egg wash

Directions

  • To begin, slice your peaches and place in large mixing bowl
  • Add your pitted sweet cherries, vanilla and lemon juice
  • Mix together your brown sugar and arrowroot starch. Add to fruit along with your pinch of cinnamon and mix well
  • Place your pie crust on a parchment lined baking sheet. Add your filling and fold your pastry up to hold in your fruit. It doesn’t have to be perfect. This is a rustic dessert:0) Brush your egg wash on the outside pastry and sprinkle with some sugar. Bake in a preheated 375 degree oven for 35-40 minutes until browned
  • Pop a scoop of ice cream on top and DIVE IN!
