Baked Salmon Sushi Bowls

I have developed the perfect sushi bowl that is sooo easy to whip together! I had this fella built in about 20 minutes! That’s how long it takes to bake the salmon and cook the rice! While those ingredients were cooking up, I pickled the purple cabbage and cucumber along with slicing up the other veggies. This is a great option if you wanted to have some friends over for a “sushi night” or if you need a fast dinner option during the week when you are short on time. There is so much flavor and crunch in this bowl with all the veggies and the spicy topping of sriracha mayo! Add it to your list to try today.

Ingredients

  • *For the Salmon*

  • 1 lb 1 Salmon

  • 1-2 tsp 1-2 BBQ Asian Seasoning or Seasoning of Choice

  • 1 tsp 1 Refined Sesame Oil

  • *For the Rice*

  • 1 cup 1 Jasmine Rice (or Sushi Rice if you prefer)

  • 2 cups 2 Water

  • 1/2 tsp 1/2 Salt

  • *For the Pickled Veggies*

  • 1 cup 1 Purple Cabbage

  • 1 1 English Cucumber Sliced

  • 1/2 cup 1/2 Rice Vinegar (1/4 cup in each bowl with Cabbage & Cucumber)

  • 2 tsp 2 Agave (1 tsp in each bowl with Cabbage & Cucumber)

  • 2 tsp 2 Sesame Oil(1 tsp in each bowl with Cabbage & Cucumber)

  • 1/2 cup 1/2 Shredded Carrot

  • 1 cup 1 Edamame

  • 2 2 Avocado Sliced

  • Sesame Seeds, Green Onion & Cilantro to Garnish

  • *For the Sriracha Mayo*

  • 1/2 cup 1/2 Mayo

  • 1-2 Tbsp 1-2 Sriracha

  • 1 tsp 1 Chili Sesame Oil

Directions

  • To begin, preheat your oven to 400 degrees. Place rice, water and salt into sauce pot and heat to boiling. Once boiling, reduce heat to low, cover and simmer for 20 minutes. Season your salmon by brushing refined sesame oil or olive oil on them followed by your favorite Asian seasoning. I use a BBQ Asian rub that I picked up from my local grocery store. Your favorite rub will work just fine. Place Salmon in oven and bake for 20 minutes
  • While Salmon is baking, pickle your red cabbage and cucumbers in separate bowls and slice the rest of your veggies
  • Build your bowls by placing rice in the bottom, followed by your veggies and Salmon. Top with your garnishes and Sriracha mayo. Enjoy!
