Grilled Peach & Chicken Caprese Sandwich

I’ve had this sandwich creation in my head for quite some time and as I was grocery shopping this morning, I walked by the most perfect carton of ripe peaches that had my name all over them. I knew today was the day to make this summertime sammie. This sandwich has so many flavors that compliment each other. The freshness of the basil aioli with the sweet peaches and the savory grilled chicken is on another level of YUM! It’s very easy to throw together with just a simple grill pan or panini press. So, dust off those George Forman grills that you haven’t used in 20 years, grab yourself some peaches and put this on your must make list soon! You’ll love it!

Ingredients

  • 1 lb 1 Boneless Skinless Chicken Breast

  • 2 2 Large Ripe Peaches

  • 4 4 Ciabatta Rolls

  • *For the Basil Vinaigrette*

  • 1 cup 1 Freshly Packed Basil

  • 1/4 cup 1/4 Olive Oil

  • 1 Tbsp 1 Red Wine Vinegar

  • 1 1 Clove of Garlic

  • 1/4 tsp 1/4 Red Pepper Flake

  • S&P to Taste

  • *For the Basil Aioli*

  • 1/3 cup 1/3 Mayonnaise

  • 2 Tbsp 2 Basil Vinaigrette

  • 4 4 Slices Fresh Mozzarella

  • Balsamic Glaze Optional

Directions

  • To begin, place all ingredients for basil vinaigrette in a high powered blender and blend until smooth
  • Add basil vinaigrette to mayonnaise and mix well to make basil aioli
  • Pound chicken and season with salt, pepper and garlic powder or seasoning of your choice and grill on a grill pan for about 4-5 min per side or if you’re grilling in a grill press, only about 5 minutes is all you need
  • Once chicken is done grilling, place your peaches skin side up and grill for about 2 minutes until you have nice grill marks on your peaches
  • To build your sammies, place your basil aioli on the bottom bun of your ciabatta roll and top with your grilled chicken and peaches. Top your bread with mozzarella slices and broil to melt your cheese and toast your bread
  • I added some basil vinaigrette on top of my sammie and also drizzled some balsamic glaze on top. It was perfection!
