Coconut Curry Chicken Meatball Bowls

I love a good one bowl dinner! Especially one that is loaded with flavor like this one is. Count me in on any dinner that uses coconut and curry! The flavor combination is rich, spicy and out of this world! Middle eastern flavors are some of my favorite and this dish delivers in all the ways! It’s the perfect bowl to cozy up with on a Friday night to kiss the week goodbye! I love the way the meatballs came together in this dish. They were the perfect choice to soak in that D to the LISH coconut curry bath! This one came together so quick that it would be a great choice on a busy night when you don’t have a lot of time or you can make it for meal prep as it reheats very well! Add it to your must try list today!
