Rumchata French Toast Casserole with Drunken Berries & Maple Whip

This has been my go to breakfast for many Christmas mornings! I developed the recipe awhile ago and didn’t want to wait a minute longer to share it with you! The combination of the Rumchata mixture with the brioche bread is perfection! Topping with the maple whipped cream and those D to the LISH drunken berries is breakfast on another level!  I promise, once you try it, you’ll be hooked and it’ll be your go to breakfast when you need to impress those picky eaters!!

Ingredients

  • *For the Casserole*

  • 1 Pkg 1 Brioche Burger Buns

  • 3 3 Eggs

  • 1 cup 1 Milk

  • 1/2 cup 1/2 Rumchata

  • Pinch of Cinnamon

  • *For the Drunken Berries*

  • 1/3 cup 1/3 Raspberries

  • 1/3 cup 1/3 Blackberries

  • 1/3 cup 1/3 Strawberries

  • 1/2 cup 1/2 Gran Marnier

  • *For the Maple Whip*

  • 1 cup 1 Heavy Whipping Cream

  • 2 Tbsp 2 Maple Syrup

  • 1/2 tsp 1/2 Vanilla

Directions

  • To begin, preheat oven to 350
  • Slice strawberries and place all berries in a bowl with Gran Marnier. Cover and place in the fridge until ready to use
  • Spray a pie plate or 9X9 baking dish with cooking spray and tear up brioche buns. Place in casserole dish
  • Whisk eggs with milk, Rumchata and cinnamon. Pour mixture over bread and ensure all is soaked well
  • Place in the oven to bake for 30 minutes or until completely baked through
  • While casserole is baking, whip together ingredients for maple whip until stiff peaks form
  • Remove casserole from oven and allow to cool for a few minutes. Slice and serve with drunken berries and maple whip. ENJOY!
