Sweet Potato Pie Smoothie with Chai Spiced Granola

It’s Thanksgiving in a glass and I’m here for it! I was thinking about creative ways I could use up some sweet potatoes I had sitting in the pantry and I thought how awesome it would be to make a healthy, D to the LISH smoothie out of them! This idea was a HUGE home run! Even Carl loved these smoothies and the extra crunch of the chai spiced granola paired with this creamy, spiced smoothie is the PERFECT marriage. I am IN LOVE with making my own homemade granola because I can control what I put in it. This granola is loaded with goodness and uses organic maple syrup to compliment the warm, chai spices. If you’re in the mood for a yummy piece of sweet potato pie but don’t want to consume all of those calories, try this smoothie and you’ll be making it on repeat, I promise!

Ingredients

  • *For the Chai Spiced Granola*

  • 2 cups 2 Rolled Oats

  • 1 cup 1 Chopped Walnuts

  • 1/2 cup 1/2 Sliced Almonds

  • 1/4 cup 1/4 Pumpkin Seeds(Pepitas)

  • 1 Tbsp 1 Cinnamon

  • 1 tsp 1 Ground Ginger

  • 1 tsp 1 Ground Cardamom

  • 1/2 tsp 1/2 All Spice

  • 1/4 tsp 1/4 Nutmeg

  • 1/8 tsp 1/8 Cayenne

  • 1/3 cup 1/3 Maple Syrup

  • 1/4 cup 1/4 Coconut Oil Melted

  • 2 tsp 2 Vanilla

  • *For the Smoothie*

  • 1/2 cup 1/2 Nonfat Vanilla Greek Yogurt

  • 1 cup 1 Unsweetened Vanilla Almond Milk

  • 1 1 Frozen Banana

  • 1 cup 1 Frozen, cooked and cubed sweet potatoes

  • 1 Tbsp 1 Almond Butter

  • 1 Tbsp 1 Chia Seeds

  • 1 tsp 1 Vanilla

  • 1 tsp 1 Cinnamon

  • 1/4 tsp 1/4 All Spice

  • 1/4 tsp 1/4 Nutmeg

Directions

  • To begin, preheat oven to 325. Mix oats, nuts and spices together
  • Melt coconut oil and whisk with maple syrup and vanilla. Pour over granola and stir to coat well
  • Pour granola onto parchment lined baking sheet and bake for 30 minutes tossing every 10 minutes
  • While granola is cooling, place all ingredients for smoothie in a high powered blender and blend until smooth. Place in glasses and top with granola and a dollop of whipped cream

  • This granola is sooo good! It would make the perfect topping for your oatmeal breakfast or on top of your yogurt parfaits! It could also double as a great holiday gift or hostess gift. Put some in a cute jar and wrap it up in a bow! Everyone loves granola😊
