Pumpkin Comfort Soup

I have been wanting to create a hearty and flavor packed soup in my new Staub pumpkin cocotte. I am very pleased with how this easy and D to the LISH pumpkin soup turned out today! It’s the perfect soup to enjoy on a cool fall day with some pumpkin spice candles burning and football on the tv! The pumpkin flavor is subtle and plays so well with the smoked chicken apple sausage and gnocchi. This was a very easy and healthy creation that came together super quick! Whip yourself up a batch today and enjoy the leftovers for lunch this week. That’s my plan!

Pumpkin Comfort Soup

Ingredients

  • 1-2 Tbsp 1-2 Olive Oil

  • 1 1 Yellow Onion

  • 2 2 Carrots

  • 2 2 Celery Stalks

  • 2 2 Cloves of Garlic

  • 2 tsp 2 Oregano

  • 1 tsp 1 Salt

  • 1/2 tsp 1/2 Pepper

  • 1 lb 1 Smoked Chicken Apple Sausage

  • 14 oz 14 Diced Tomatoes

  • 1 cup 1 Pumpkin Purée

  • 1/2 cup 1/2 Apple Cider

  • 4 cups 4 Chicken Stock

  • 1 1 Package Gnocchi

  • 15 oz 15 Cannellini Beans

  • 1/3 cup 1/3 Fresh Grated Parmesan

  • 1-2 cups 1-2 Fresh Spinach

Directions

  • To begin, add 1-2 Tbsp of olive oil to soup pot. Sauté onions, garlic, carrots and celery together until starting to soften
  • Add spices and stir together
  • Add Chicken Apple Sausage and stir well
  • Add Diced Tomatoes
  • Add pumpkin purée
  • Add Apple Cider
  • Add Chicken Stock and stir well. Bring to boil, place lid on and turn to medium/low. Simmer for 20-30 minutes until veggies are tender
  • Remove lid, add parmesan cheese, gnocchi, beans and spinach. Stir to incorporate. Ladle in bowls and enjoy!
