Cheesy Lemon Roasted Brussel Sprouts

Do we all have the “I hated brussels when I was a kid story?” We have come very far with our methods for how we prepare Brussels, haven’t we? I think cheese is a MUST HAVE for this yummy veggie and especially when it’s prepared to be super crispy from oven roasting it! When I tell you that these Brussels disappeared faster than anything else on the table, I’m not lying! We were eating them right out of the serving bowl and savoring every bite! Don’t leave out that finishing squeeze of lemon! It really brings this dish over the top!

Cheesy Lemon Roasted Brussel Sprouts

Ingredients

  • 1 Bag 1 Steam-able Fresh Brussel Sprouts

  • 1/2 cup 1/2 Grated Parmesan Cheese

  • 1/2 cup 1/2 Melted Butter

  • 1 1 Lemon Zested and Juiced

  • 1/2 tsp 1/2 Red Pepper Flake

Directions

  • To begin, preheat oven to 400 degrees and steam brussels in the microwave for 3 minutes just to soften. Remove from microwave and let cool just a bit
  • While brussels are cooling, melt butter and mix with parmesan cheese
  • Spread parmesan and butter mixture on the bottom of your sheet pan. Zest your lemon on top of the cheese mixture
  • Cut brussels in half and place cut side down on top of parmesan mixture. Smash with the bottom of a glass
  • Squeeze half the lemon over the brussels and place in the oven on the lowest rack to roast for 20 minutes
  • Remove from oven, toss together and squeeze other half of lemon on top of brussels. ENJOY!
