Get Well Soon Lentil Soup

I love creating easy, yummy soups as they are the perfect option for a quick lunch or dinner as well as the optimal meal prep item. Just pair with a crusty piece of bread or a nice green salad to round out your meal! I created this soup because my love, Carl was under the weather and I wanted to make something that would warm him up and make him feel better! This soup has all the healthy ingredients to fill you up with the lentils and beans as well as the kale that I wilt in at the end! Lot’s of carrots and celery along with some diced tomatoes bulk up the soup even more. The key to this soup is the spice mixture I came up with that includes, smoked paprika, cumin and turmeric along with some other pantry staples. Turmeric has healing properties and is a potent antioxidant and anti-inflammatory. The spices paired so well with all the goodies in this soup. It was very easy to throw together and cooked up in 30 minutes. You don’t have to wait until you’re sick to give this D to the LISH pot of goodness a try!

Ingredients

  • 1 Tbsp 1 Olive Oil

  • 1 1 Yellow Onion Diced

  • 2-3 2-3 Carrots Sliced

  • 2 2 Celery Stalks Sliced

  • 1 Tbsp 1 Minced Garlic

  • 1 Tbsp 1 Smoked Paprika

  • 2 tsp 2 Cumin

  • 1 tsp 1 Turmeric

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Oregano

  • 1 tsp 1 Salt

  • 1/4-1/2 tsp 1/4-1/2 Cayenne

  • 4 cups 4 Chicken or Vegetable Stock

  • 15 oz 15 Diced Tomatoes

  • 15 oz 15 Cannellini Beans

  • 1 cup 1 Lentils

  • 2-3 cups 2-3 Kale

Directions

  • To begin, prep all of your veggies. Heat olive oil in your soup pot and add onion, celery and carrot. Sauté until starting to soften and onions are translucent
  • Add garlic and sauté for a couple minutes
  • Mix all spices together and add to pot. Sauté spices with veggies to release the aromas and toast them up a bit
  • Add stock, beans and lentils along with a bay leaf. Bring to boil, then turn to low, pop a lid on and simmer for 30 minutes or until lentils are tender
  • Remove lid and wilt in kale. Ladle in bowls and ENJOY!

Notes

  • You control the heat in this soup by how much cayenne you add. Keep it at 1/4 tsp if you want subtle heat and use 1/2 tsp if you want a mild, runny nose. LOL! I love the heat as it adds additional warmth to this already delish soup!
  • Any type of bean you want to add to this soup would be great! Make it your own!
