Mediterranean Chickpea Salad

I love a good, healthy salad that has plenty of colors and flavors! This salad doesn’t skimp on anything! It’s the perfect salad to side with your favorite Mediterranean dishes and it’s super low in calories! I love the benefit of a low cal recipe that still delivers on the flavors I want! This salad is loaded with herbs, garlic, reduced fat feta and some juicy lemon! The sweetness of the cherry tomatoes pairs beautifully with the freshness of the parsley and mint along with that added protein that the chickpeas provides. Mediterranean Chickpea Salad

Ingredients

  • 15 oz 15 Canned Garbanzo Beans Rinsed and Drained

  • 3 3 Mini Cucumbers Sliced

  • 1/3 cup 1/3 Fresh Italian Parsley Chopped

  • 1/3 cup 1/3 Fresh Cherry Tomatoes Sliced

  • 1/3 cup 1/3 Red Bell Pepper Diced

  • 1/4 cup 1/4 Green Onions Sliced

  • 1/4 cup 1/4 Reduced Fat Feta Cheese

  • 2 Tbsp 2 Mint Chopped

  • 2 Tbsp 2 Dill Chopped

  • 1 1 Garlic Clove Minced

  • 2 Tbsp 2 Olive Oil

  • 1 1 Lemon Zested & Juice of 1/2 lemon

  • S&P to taste

Directions

  • To begin, rinse and drain your chickpeas. Add to your bowl
  • Add remaining ingredients and toss well
  • Plate and enjoy!
