Instant Pot Asian Sticky Ribs

I love dinners that are full of amazing flavors and are super easy to make! This one checks all the boxes! I could put this sticky sauce on anything and everything! As we devoured these ribs, I was naming off all the things I wanted to make using this sauce! Obviously, my mind never shuts off on thinking about my next creation. These ribs came out fall off the bone and so tender in only 30 minutes in the IP! I paired them with some D to the LISH toasted coconut lime rice with cilantro. The lime was the perfect pairing with the toasted coconut and the cilantro added just the right amount of freshness! Put these ribs on your list of must try recipes and you’ll for sure be adding them to your favorites!

Ingredients

  • 1 1 Rack of Pork Ribs (Spare or Baby Back)

  • 1 Tbsp 1 Asian Style BBQ Rub

  • 1 cup 1 Water

  • *For the Sticky Sauce*

  • 1 cup 1 Light Brown Sugar

  • 3/4 cup 3/4 Low Sodium Soy Sauce

  • 1/4 cup 1/4 Water

  • 1/4 cup 1/4 Mirin

  • 2 Tbsp 2 Pure Toasted Sesame Oil

  • 1 Tbsp 1 Rice Wine Vinegar

  • 1 Tbsp 1 Ginger Paste or Minced Ginger

  • 4 4 Cloves Grated Garlic

  • 2 tsp 2 Sriracha

  • 1/2 tsp 1/2 Red Pepper Flake

  • 1/4 tsp 1/4 Pepper

  • 1 1 Scallion thinly sliced

  • 3 Tbsp 3 Corn Starch + 3 Tbsp Water for Slurry

  • *For the Toasted Coconut Lime Rice*

  • 2 cups 2 Water

  • 1 cup 1 Rice

  • 1/3 cup 1/3 Shredded Coconut

  • 1 Tbsp 1 Olive Oil

  • 1 1 Lime Zested & Juiced

  • 2 Tbsp 2 Chopped Cilantro

  • Green Onion, Cilantro & Sesame Seeds for Garnish

Directions

  • To begin, season your pork ribs with the bbq rub and marinate for 8-24 hours
  • Place pork ribs in Instant pot with 1 cup of water and set to pressure for 30 minutes. When 30 minutes is up, allow to natural pressure release. About 15 minutes
  • While ribs are cooking, make sticky sauce. Add all ingredients for sauce to small sauce pot and bring to simmer. Combine cornstarch and water together. Add to bubbling sauce and allow to thicken. Remove from heat and pour into a jar. Set aside until you need it for the ribs
  • To make the rice, add olive oil and shredded coconut to sauce pot. Toast until the coconut begins to brown, then add rice. Toast together for a couple of minutes then add water. Zest and juice your lime in and add a pinch of salt. Bring to boil, cover and simmer on low for 20 minutes until rice is tender and fluffy. Chop cilantro and add to rice once it’s finished cooking.
  • Once ribs are done, remove from Instant Pot and place on a parchment lined baking sheet. Preheat your broiler to HI. Brush your sticky sauce all over your ribs and place under the broiler for 5-8 minutes. Watch carefully as you broil to make sure the sauce doesn’t burn. Garnish ribs with sesame seeds, cilantro and green onion. Slice and serve with rice. ENJOY!

Notes

  • You will have leftover sticky sauce. If you wanted to cook up more than one rack of ribs, you could easily do that and have plenty of sauce left to glaze on your additional racks. You can fit another rack of ribs in your IP and cook two at the same time.
