Curried Turkey Meatballs with Za’atar Cauliflower Mash & Lemony Yogurt Drizzle

It is really exciting to create a meal that has so many fun, unique flavors and is super healthy. I have really been enjoying expanding my creativity with coming up with more healthy meals for Carl and I to enjoy. This meal is only 1 pt if you’re following the WW plan! It is so easy to throw together and uses some fun spices to jazz things up! I blended the lean Turkey with a curry spice blend mixed in nonfat Greek yogurt. It was a perfect combination for these D to the LISH meatballs. The cauliflower mash is so easy to prepare along with the yogurt drizzle. Ingredients

  • *For the Meatballs*

  • 1 lb 1 Extra Lean Ground Turkey 98%

  • 1/2 1/2 Small Yellow Onion Diced

  • 1/4 cup 1/4 Non Fat Plain Greek Yogurt

  • 2 tsp 2 Curry Powder

  • 1 tsp 1 Turmeric

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Oregano

  • 1/2 tsp 1/2 Salt

  • 1/4 tsp 1/4 Cayenne

  • *For the Cauliflower Mash*

  • 2 2 Bags of Frozen Riced Cauliflower

  • 3 Tbsp 3 Butter (I can’t believe it’s not butter light for WW followers)

  • 1-2 tsp 1-2 Za’atar Seasoning

  • S&P to Taste

  • *For the Lemony Yogurt Drizzle*

  • 1/2 cup 1/2 Non Fat Plain Greek Yogurt

  • 1 1 Lemon Zested and 1/2 the lemon juiced

  • Salt to taste

Directions

  • To begin, mix all spices for the meatballs with the yogurt. Add diced onion and spiced yogurt mix to the ground turkey and mix well. Form into 12 meatballs and place on a parchment lined sheet tray. Store in the fridge for 2+ hours to marinate the flavors together. (You can skip this step if you don’t have time, but I find the longer the flavors marinate, the more yummy the meatballs are)
  • Preheat oven to 400 degrees. Place meatballs in the oven and bake for 20 minutes, flipping half way through
  • While meatballs are baking, mix yogurt drizzle together by combining ingredients and storing in the fridge until ready to use
  • To make cauliflower mash, heat up 2 bags of riced cauliflower and place in a bowl. Add butter and seasonings. Using an immersion blender, blend cauliflower until it is puréed into a mash
  • To build bowls, add mashed cauliflower and any other side of your choice (I like Broccolini with this dish). Top with meatballs and lemony yogurt drizzle. Garnish with cilantro, mint and lemon wedge
