Summer Tortellini Salad

During the summer months, my appetite shifts towards lighter and fresher meals. That’s why I’ve been loving this Summer Tortellini Salad with roasted summer squash, roasted red peppers and balsamic vinaigrette. It’s a perfect blend of seasonal flavors that are sure to satisfy your taste buds! The tortellini provides a satisfying chewiness, while the vegetables add a variety of textures and tastes. Summer Tortellini Salad

Ingredients

  • 8 oz 8 Refrigerated Tortellini

  • 12 oz 12 Jar of Roasted Red Peppers

  • 1 lb 1 Summer Squash (about 2)

  • 1/2 1/2 Small Red Onion Sliced or Diced

  • 1/4 cup 1/4 Mozzarella Pearls

  • 2 Tbsp 2 Chopped Parsley

  • 2 Tbsp 2 Chopped Basil

  • 1 Tbsp 1 Olive Oil

  • S&P to taste

  • *For the Dressing*

  • 1/4 cup 1/4 Olive Oil

  • 2 Tbsp 2 Balsamic Vinegar

  • 1 1 Clove Grated Garlic

  • S&P to taste

Directions

  • To begin, preheat oven to 400 degrees. Slice your summer squash, toss in olive oil and S&P. Place on a sheet tray and roast for about 12-15 minutes until tender
  • Heat water on the stove top to boil and cook tortellini to package directions. Rinse under cold water to stop the cook and cool off
  • To make the dressing, add all ingredients together and whisk or shake well to incorporate
  • Chop roasted red peppers from the jar and dice red onion. Slice mozzarella balls in half
  • To assemble the salad, place tortellini in serving bowl and add remaining ingredients. Pour dressing over salad and toss to coat. Garnish with additional basil and Dive In!

Notes

  • This salad could invite so many other fun additions! I think roasted corn would make a great add to this already amazing salad! The sky is the limit with this beauty! Create your own masterpiece and enjoy!
