Rainier Cherry Summertime Caprese Salad

Nothing makes me happier than when I walk into the produce section of my grocery store and see the Rainier cherries! They are my favorite of all the cherries! Mind you, there isn’t a cherry I don’t like. I just like these the best! I came up with this salad idea a couple of years ago! It’s so fresh and easy to throw together. I enjoy it so much on a hot summer day. It’s not a heavy salad and the sweet combination of the cherry tomatoes with the cherries paired with the fresh basil and mint is PERFECTION! I love the touch of mozzarella with the drizzle of balsamic glaze. Sometimes, I’ll top it with some fresh cracked black pepper or even add some extra fruit like peaches. However you decide to enjoy this salad, I promise, you’ll be adding it to your “make every summer” list just like me!

Ingredients

  • 1 cup 1 Rainier Cherries Pitted

  • 1 cup 1 Sliced Cherry Tomatoes

  • 1/2 cup 1/2 Mozzarella Pearls

  • 1/4 cup 1/4 Fresh Chopped Basil

  • 2 Tbsp 2 Fresh Chopped Mint

  • Balsamic Glaze to Top

Directions

  • To begin, pit your cherries and slice your cherry tomatoes in half. Place in your serving bowl
  • Chop and add your basil, mint and mozzarella pearls
  • Top with balsamic glaze and DIVE IN!!
