Teriyaki Broccoli & Shiitake Mushroom Noodle Bowls

I wish I could say that I spent a lot of time coming up with this recipe creation, but the truth is, I had something totally different planned, but the particular veggies I wanted to use for the creation were spoiled(way too early I might add) and I stood in the kitchen thinking what can I do with what I have? So, I started fishing through my veggie drawer and found an entire bag of shiitake mushrooms that my lovely instacart shopper surprised me with along with a couple crowns of fresh broccoli. It didn’t take me long to come up with this quick and easy skillet creation that I served up with some rice noodles and crunchy peanuts. Give it a try the next time you are craving a take out fake out night! This is the perfect recipe to add to your list!

Teriyaki Broccoli & Shiitake Mushroom Noodle Bowls

Ingredients

  • 1-2 Tbsp 1-2 Refined Sesame Oil

  • 1 lb 1 Ground Meat of Choice(I used ground pork)

  • 3 1/2 cups 3 1/2 Sliced Shiitake Mushrooms

  • 12 oz 12 Broccoli Florets

  • 2 2 Green Onions chopped

  • 1 1 Yellow Onion Diced

  • 2 2 Cloves Garlic Minced

  • *For the Sauce*

  • 1/3 cup 1/3 Teriyaki Sauce

  • 2 Tbsp 2 Chili Garlic Sauce

  • 1 Tbsp 1 Brown Sugar

  • 2 tsp 2 Ginger Paste

  • 1 tsp 1 Lemongrass Paste

  • 1 tsp 1 Pure Sesame Oil

  • 1/2 tsp 1/2 Fish Sauce(Optional)

  • Chopped Peanuts, Cilantro and Green Onion for Garnish

Directions

  • To begin, dice your onion, mince the garlic and wipe down mushrooms with a damp towel. Slice mushrooms and chop broccoli to small/medium sized pieces.
  • Heat a skillet and add refined sesame oil. Once heated through, add diced onion and sauté until translucent
  • Add garlic and stir until it becomes fragrant then add ground meat of choice. Brown half way and add sliced shiitake mushrooms
  • Salt mushrooms to draw out the moisture. They will begin to shrink as you sauté them. Once they shrink down, add broccoli
  • Stir broccoli with meat and mushrooms for a couple minutes then combine all ingredients to make the sauce. Whisk sauce together and add to skillet. Stir all together and sauté for a couple minutes. Turn stove to low and cover to steam broccoli for 5-10 minutes
  • Heat water to boiling on the stove and cook rice noodles to package directions. Ladle noodles and broccoli skillet in bowls and garnish with chopped peanuts, cilantro and green onions. It’s time to DIVE IN!

Notes

  • If you wanted to make this dish vegetarian, just omit the meat and add more mushrooms and broccoli.
  • This would be great served over white or brown rice also.
  • If you can’t find shiitake mushrooms, you can substitute with baby bellas.
  • I keep tubes of ginger and lemongrass paste in my refrigerator for quick and easy meals like this. It makes it so simple to add the additional flavor without having to peel and mince fresh ginger.
  • Fish sauce is totally optional but adds a nice hint of Umami flavor that adds extra depth to this dish.
