Italian Sammie with Pesto Aioli

Raise your hand if you love a good, deli style sandwich! 🙋‍♀️ This sammie has it all! Crusty ciabatta bread, homemade pesto aioli, my favorite meats and some fresh arugula! What’s not to love?! It’s so big that it could honestly feed 4 people with some chips on the plate as a crunchy accompaniment! I love the freshness that the pesto and arugula bring as well as the slight heat of the banana peppers. You could serve this sammie toasted as well if you wanted some melty cheese and toasty bread. Side it with a bowl of tortellini soup and have some friends over for a night of Italian yummies! Pair this gargantuan sandwich with a crisp, white Italian Gavi or bubbly Prosecco.

Ingredients

  • 16 oz 16 Ciabatta Bread

  • 1/3 cup 1/3 Mayonnaise

  • 2 Tbsp 2 Pesto *See Notes*

  • 8 8 Slices Deli Ham

  • 8 8 Slices Deli Italian Salami

  • 8 8 Slices Provolone Cheese

  • 3-4 3-4 Banana Peppers Sliced

  • 1-2 Cups 1-2 Arugula

  • 1-2 tsp 1-2 Olive Oil

  • S&P to taste

Directions

  • To begin, mix 2 tbsp of Pesto with mayo. Slice ciabatta bread in half and spread pesto aioli on both pieces of bread
  • Layer meats and cheese onto both pieces of bread followed by sliced peppers
  • Massage olive oil into arugula and top on sandwich. Place top of sandwich on bottom half and cut into 4 pieces
  • Serve with Chips, or side of soup and DIVE IN!

Notes

  • You can make your own pesto for this sammie or you can purchase store bought pesto to make your aioli. I used homemade Pesto that I had leftover from a roast I made the night before. Here is my recipe for that pesto. 2 cups packed basil leaves, 1 cup mint leaves, 1/2 cup olive oil, 1/4 cup parm cheese, 1/4 cup pistachios, 3 cloves garlic, zest of 1 lemon and juice of 1/2 a lemon. S&P to taste. Blend all together in a high powered blender until smooth.
  • You can add additional meats to this sandwich if you wanted. Prosciutto would be a great addition!
