Champagne Chicken

Happy Valentines Day! I have a special dinner for those of you who weren’t able to get those last minute dinner reservations and want a special dinner for you and your love. There is a special place in my heart for this dinner as it’s one of the first recipes I developed years ago. This is such a decadent dinner and the perfect choice to cook for your Valentine. The richness of this dish calls for a nice glass of bubbly which is fitting on a special day like today! Cheers to you and your Valentine!

Champagne Chicken

Ingredients

  • 2-4 2-4 Boneless Skinless Chicken Breast

  • 8 oz 8 Sliced Baby Bella Mushrooms

  • 8 oz 8 Mascarpone Cheese

  • 1/2 cup 1/2 Grated Parmesan

  • 1 cup 1 Heavy Cream

  • 1/2 cup 1/2 Champagne or Sparkling Wine

  • 2 cloves 2 Garlic

  • 1 pkg 1 Fresh Sage Leaves

  • 3 Tbsp 3 Butter

  • 1 Tbsp 1 Olive Oil

  • 1 pkg 1 Refrigerated Tortellini

  • S&P to taste

Directions

  • In a sauce pot on the stove, add heavy cream and 4-5 sage leaves. Simmer cream for 5 minutes then remove from heat and steep for 30 minutes. Remove sage leaves after 30 minutes and discard. Set infused cream aside for later
  • Pound chicken and season with S&P. With stove on medium/high, place oil in skillet and heat through. Place chicken in pan. Brown chicken on both sides about 4-5 minutes per side, then remove from pan and tent with foil.
  • Add 2 Tbsp of butter to your skillet and once melted, add mushrooms. Saute for a few minutes then add your minced garlic.
  • Add champagne to deglaze the pan and simmer for 3 minutes to cook out the alcohol
  • Melt in your mascarpone and add your sage infused cream along with the grated parmesan. Stir together and add your chicken back to the pan. Cover and simmer on low
  • Heat a pot of water to boiling and cook your tortellini to package directions. Once cooked, add tortellini to skillet and stir to combine.
  • Add 1 Tbsp of butter to small saute pan and once melted, add 4-8 sage leaves and crisp up to crumble on top of your finished plate.
  • Plate in pasta bowls, pour yourself and glass of bubbly and ENJOY!

Notes

  • When purchasing your bubbly for this recipe, make sure you get a Brut or Extra Dry. You want a dry bubbly for this dish so that is my recommendation.
  • Mascarpone cheese is usually located in the gourmet cheese section of the grocery store. If you can’t find it, you can sub cream cheese.
