Salmon Power Bowls

It’s January! It’s time to kiss goodbye the cookies and cake that we’ve been living off of for the past month and get back to some healthy eating habits! I have the perfect dinner creation to help us get back on track! I know that it’s not always fun to eat healthy because the argument could be made that healthy food doesn’t taste as good, but I promise you, these Salmon Power Bowls are LOADED with sooo much flavor that you won’t even remember you’re eating healthy! Give them a try and you’ll be adding them to your regular rotation!

Salmon Power Bowls

Ingredients

  • 1 lb 1 Salmon

  • 1 Lg 1 Sweet Potato

  • 1 Bunch 1 Kale

  • 1/2 cup 1/2 Red Quinoa

  • 1 Tbsp 1 Olive Oil + a teaspoon for Kale

  • 1/2 cup 1/2 Nonfat Greek Yogurt

  • 1 1 Lime zested & Juiced

  • 1 Tbsp 1 Chili Powder

  • 1 Tbsp 1 Brown Sugar

  • 1/2 Tbsp 1/2 Cumin

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Onion Powder

  • 1 tsp 1 Salt

  • 1/2 tsp 1/2 Cayenne

  • 1/4 tsp 1/4 Pepper

Directions

  • To begin, preheat oven to 400 degrees
  • Cook quinoa on the stove top with 1 cup of water. Bring to boil then reduce heat to low, cover and simmer for 20 minutes.
  • Strip, slice and wash kale. Using about 4 -6 cups of Kale, add teaspoon of Olive oil and a sprinkle of salt. Massage kale for 1-2 minutes to soften. Set aside until you’re ready to build the bowls.
  • Mix together Chili powder, cumin, garlic powder, onion powder, cayenne, brown sugar and S&P. Cube salmon and add 1 – 1.5 tablespoons of your spice mixture onto your salmon cubes.
  • In a small container, add 1/2 cup nonfat greek yogurt with the zest of a lime and the juice of 1/2 the lime. Stir all together and salt to taste. Save to top your bowls with.
  • Peel and cube the sweet potato and place on a sheet pan. Add 1 tablespoon of olive oil and coat well. Sprinkle 1 tablespoon of your seasoning on the sweet potatoes and massage into the cubes. Bake in the oven for 15 minutes then remove and slide sweet potatoes to one side of the sheet pan. Add salmon to the other side and bake both together for 15 more minutes.
  • To build bowls, add 1/2 cup quinoa, 2 cups of Kale, 1/2 of your salmon cubes and sweet potato cubes to your bowl. Top with Lime crema and enjoy! This recipe makes 2 bowls

Notes

  • You will have some seasoning leftover which is totally fine! You can use this seasoning on so many things!
  • If you are not a fan of salmon, it’s ok to sub it out for chicken. Everything about the recipe would remain the same. Your cook time on the chicken cubes may adjust to 20 minutes depending on their size and your oven. Just temp them and make sure they’re at 165 degrees.
  • There is so much prep you can do with this recipe ahead of time to make it easier on you. Mix your spices and marinate your salmon early to really amp up the flavor! You can cube your sweet potato, mix together your lime crema and even wash and chop your kale. Just place everything in the fridge until you’re ready to assemble and cook.
  • If you are not a fan of heat, it’s ok to cut down on the cayenne. Just add 1/4 tsp or even an 1/8 tsp for a milder seasoning to accommodate everyone.
