Sheet Pan Pork Tenderloin Dinner

I struggled to come up with a name for this dinner. Honestly, it doesn’t need to be that difficult! It’s an all in one sheet pan dinner! Your entire meal cooks together, directly on the sheet tray which takes so much stress out of your dinner preparation. I used pre packaged gnocchi which roasted up beautifully next to some red onion and brussels. Pork tenderloin was my protein of choice and I kissed the finished product with a drizzle of pomegranate molasses along with a sprinkle of pomegranate arils and some crumbled feta. Everything came together perfectly and it couldn’t have been any easier! This would be an excellent choice to entertain with!

Ingredients

  • 2 lb 2 Pork Tenderloin

  • 1 lb 1 Brussels

  • 1 1 Red Onion

  • 1 1 Package Gnocchi

  • *Feta and Pomegranate Arils for Topping*

  • *Pomegranate Molasses for Topping*

  • *For the Seasoning*

  • 1 Tbsp 1 Sweet Paprika

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Onion Powder

  • 1/4 tsp 1/4 Cayenne

  • S&P to Taste

Directions

  • To begin, preheat oven to 425. Slice brussels and onion. Toss gnocchi along with brussels and onion in olive oil and a pinch of your seasoning
  • Season your tenderloin with the rub and place in the middle of the sheet tray. Arrange your gnocchi and veggies along side the pork
  • Roast for 25 minutes. Remove pork and if brussels need more time, leave in for another 5-10 minutes to your desired tenderness. Allow pork to rest for 10 minutes before slicing to allow the juices to redistribute in the meat
  • Top with pomegranate molasses, pomegranate arils and crumbled feta. It’s time to dive in!!
