Toasted Pine Nut & Mint Couscous

Creating easy, side dishes is one of my favorite things! In this D to the LISH side, I take tender couscous and amp it up with some fresh chopped mint and toasted pine nuts. The nuts add such an amazing depth of flavor and the mint gives this dish a kiss of freshness that will pair perfectly with any meal but especially my Moroccan chicken stew! It plays off spicy dishes very well. Whip up a batch to pair with your favorite main course and enjoy!

Toasted Pine Nut & Mint Couscous

Ingredients

  • 1 cup 1 Couscous

  • 1 cup 1 Water

  • Salt to Taste

  • 1 Tbsp 1 Olive Oil

  • 2 Tbsp 2 Fresh Chopped Mint

  • 1/2 cup 1/2 Pine Nuts

Directions

  • Place sauce pot on stovetop with water, olive oil and salt. Bring to boil. Once boiling, add couscous, remove from heat and place lid on for 5 minutes
  • While couscous is cooking, toast your pine nuts in a medium fry pan over medium/low heat until lightly toasted and starting to release fragrance
  • Fluff your couscous and stir in your mint and pine nuts. You’re ready to serve!!
