Balsamic Fig Chicken

I have a favorite store I like to visit when Carl and I take a nice day trip to Grapevine. It’s the Grapevine olive oil company and they make the most perfect balsamic fig vinegar. I had to pick some up on my last visit there along with some fresh figs at Trader Joe’s. I didn’t know what I was going to make when I initially got them, but I came up with super easy, D to the LISH balsamic fig braised chicken! The flavors are super yum and the goat cheese adds a nice tang with the sweetness of the figs. Give this one a try when you find fresh figs in season!

Ingredients

  • 1 Tbsp 1 Olive Oil

  • 6 6 Bone in Skin on Chicken Thighs

  • Salt, Pepper & Garlic Powder to Taste

  • 1 1 Shallot, Diced

  • 2 2 Garlic Cloves, Minced

  • 1 cup 1 Chicken Stock

  • 2 Tbsp 2 Balsamic Fig Vinegar(Or plain Balsamic vinegar)

  • 1/2 Tbsp 1/2 Dijon Mustard

  • 1 Tbsp 1 Honey

  • 5 5 Figs, Sliced in half or quarters

  • 1 1 Red Onion, Thinly Sliced

  • 2 tsp 2 Fresh Thyme

Directions

  • To begin, preheat oven to 350. Season your chicken and preheat your skillet over medium/high heat. Add olive oil and place chicken skin side down. Sear for about 5 minutes. Remove from skillet to a plate and start on your pan sauce
  • To make your pan sauce, add shallot to the skillet and sauté until translucent. Add garlic, stock, balsamic vinegar, dijon and honey. Whisk to mix everything together
  • Add your sliced red onions, figs and thyme to the sauce. Place chicken on top
  • Place lid on your skillet and braise in oven for about 45 minutes until chicken temps at least 165
  • Sprinkle goat cheese on top of chicken. Serve with mashed potatoes and your favorite vegetable!
