Stone Fruit Cobbler

Stone Fruit season is one of my favorite seasons! Seriously, what’s not to love about all the amazing fruit we get during stone fruit season?! I had a bag of plums and peaches in my fridge that were threatening to go bad soon as I couldn’t keep up with eating them fast enough, so I decided to whip together a yummy cobbler, and I have to tell you, it did NOT disappoint! Carl and I both really enjoyed it! The pillowy soft and subtly sweet biscuit topping was the perfect marriage with the slightly sweet and tart fruit. Just 45 minutes in the oven is all it takes to give you a bubbling pan of goodness! Top it with some vanilla ice cream and DIVE IN!

Ingredients

  • 3 cups 3 Peaches or Nectarines, Sliced

  • 3 cups 3 Plums, Sliced

  • 1/3 cup 1/3 Sugar

  • 2 Tbsp 2 Corn Starch

  • 1 tsp 1 Cinnamon

  • 2 Tbsp 2 Cold Butter, Cubed

  • *For the Biscuit Topping*

  • 1 cup 1 Flour

  • 2 Tbsp 2 Sugar

  • 1 tsp 1 Baking Powder

  • 4 Tbsp 4 Cold Butter, Grated or Diced

  • 1/2 cup 1/2 Greek Yogurt

  • 2 Tbsp 2 Milk

Directions

  • To begin, preheat oven to 375. Slice fruit and place in a 9×9 baking dish
  • Mix sugar, corn starch and cinnamon with fruit. Stir well. Cube 2 Tbsp of butter and place cubes all over fruit
  • In a medium mixing bowl, add flour, baking powder and sugar. Stir to combine. Add grated, cold butter and combine until incorporated with flour mixture
  • Stir in greek yogurt and add a couple tablespoons of milk to help bring the dough together
  • Drop heaping scoops about 1/4 cup each on top of fruit, leaving space for some of the fruit to show through. Spread the mounds of biscuit dough out a bit so it bakes evenly
  • Place in the oven and bake for 45-50 minutes until fruit is bubbling and biscuits are brown. Remove and allow to cool a bit
  • Serve in bowls with a scoop of vanilla ice cream or whipped cream

Notes

  • You can use full fat or non fat greek yogurt. Mine was non fat and it gave me a beautiful bake on the biscuits. Greek yogurt is a healthy substitution for buttermilk as it has the same tangy properties that buttermilk has with less fat.
