I had this idea to make this super easy bowl loaded with fresh, Mediterranean flavors! I started with some orzo and cooked it risotto style, low and slow, hence how this bowl got her title, “Orzotto”. I toasted the orzo and added in freshly grated parm cheese along with lemon zest, peas and fresh mint for an added brightness. I seasoned the shrimp with smoked paprika and other seasonings that were the perfect combo with the orzo. This would be an excellent idea to serve for a lunch or brunch with your besties, paired with a chilled white wine!
