Carne Asada

I was looking for something to serve for Super Bowl Sunday that wasn’t the typical game day recipes that everyone usually serves. Don’t get me wrong, I love a good buffalo chicken dip, but I wanted to go a different route this year. When I heard our friends were bringing our favorite queso from Torchy’s, I knew exactly what I wanted to feature! I’ve been wanting to test out a new Carne Asada marinade I created, and I have to say, it was a slam dunk! Or, since I served it for the Super Bowl, we can call it a touchdown! The marinade was perfection on the skirt steak, especially grilled over the hot charcoals. Everyone went back for seconds and gave it two thumbs up! The next time you’re planning a Tex Mex party, you need to add these to your menu!

Ingredients

  • 3 lbs 3 Skirt or Flank Steak

  • *For the Marinade*

  • 1/2 cup 1/2 Freshly Squeezed Lime Juice

  • 1/3 cup 1/3 Freshly Squeezed Orange Juice

  • 1/4 cup 1/4 Soy Sauce

  • 1 tsp 1 Worcestershire Sauce

  • 4 4 Cloves Garlic

  • 1/2 1/2 Large White Onion(or 1 Small White Onion)

  • 1/2 cup 1/2 Fresh Cilantro

  • 1 1 Jalapeño, seeded for milder preference

  • 2 Tbsp 2 Olive Oil

  • 1/2 Tbsp 1/2 Ancho Chili Powder(Could use regular chili powder)

  • 1/2 Tbsp 1/2 Cumin

  • Black Pepper to Taste

Directions

  • To begin, place all ingredients for marinade in a high powered blender, blend until smooth. Place steak in a gallon sized ziplock bag and pour over marinade. Seal and place in the fridge for at least one hour, but up to 8. The longer you marinate, the more flavor and tenderness your steak will have. I recommend not marinating past 8 hours as the steak could break down too much and be too mushy upon cooking. I marinated mine for 6 hours
  • Preheat a charcoal grill, and once coals are ripping hot, place steak directly over coals. Grill for 3-4 minutes and flip. Grill 3-4 more minutes on second side and pull to rest for 5-10 minutes. This will give you the most perfect medium rare cook. Add 1-2 additional minutes per side if you wanted a more well done piece of meat. Once steak has rested, slice against the grain for optimum tenderness
  • Serve with your favorite tortillas and all the fixings for the most D to the LISH taco you’ll ever have!

Notes

  • Alternative cooking methods; You can grill these on a propane grill at high heat, on a grill pan indoors or under the broiler on high. Any method will work. The timing of the cook, stays the same.
