Spiced Grilled Chicken Thighs with Thai Basil Chimichurri

When I developed this recipe, I honestly didn’t think it would turn out as good as it did. Carl kept commenting how good it was with every bite! The spice flavors on the chicken paired with the chimichurri was another level of flavor combo that really worked! I paired this dinner with toasted coconut rice and that was just another layer of flavor that elevated this recipe! The Thai basil chimichurri was such a beautiful addition to the chicken. I’m a HUGE chimichurri fan and normally I make what I would consider the authentic Argentinian chimichurri that has more of a parsley forward flavor, but this is primarily Thai basil which gives a nice anise flavor paired with the mint and cilantro that I added to it. It’s uniquely different and something that you should definitely feature at your next dinner party! Enjoy!

Ingredients

  • 1 lb 1 Boneless Skinless Chicken Thighs

  • *For the Spice Rub*

  • 1 Tbsp 1 Sweet Paprika(Could do Smoked Paprika also)

  • 2 tsp 2 Cumin

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Onion Powder

  • 1 tsp 1 Salt

  • 1/2 tsp 1/2 Coriander

  • 1/4 tsp 1/4 Cayenne

  • *For the Thai Basil Chimichurri*

  • 1 cup 1 Fresh Thai Basil, Chopped

  • 3/4 cup 3/4 Fresh Cilantro, Chopped

  • 1/4 cup 1/4 Fresh Mint, Chopped

  • 1 1 Small Red Onion, Diced

  • 4 4 Cloves Garlic, Minced

  • 3/4 – 1 cup 3/4 – 1 Olive Oil

  • 1/4 cup 1/4 Red Wine Vinegar

  • Strong Pinch of Crushed Red Pepper

  • Salt to Taste

Directions

  • To begin, chop and dice all your ingredients for chimichurri and mix well in bowl with olive oil and vinegar. Allow chimichurri to sit and marinate while you grill your chicken
  • Preheat your grill to medium/high. Mix spice rub ingredients together and sprinkle on both sides of chicken, coating well
  • Oil your grates and grill chicken on either side for 5 minutes until cooked through
  • Remove chicken from grill and allow to rest for 5-10 minutes
  • Slice chicken and spoon chimichurri on top. Enjoy!

Notes

  • I always say when making chimichurri, I give my measurements as a guide. You may want to add more or less oil, more or less red wine vinegar. It’s totally up to you so make it your own!
