Spicy Gochujang Cashew Chicken

There is not much I like more than a good take out fake out bowl! Just when I think I’ve made all the rice bowls I can, my wheels start spinning with another idea for a bowl that is a spin on one of my go to Chinese take out orders! This has all the things I want in my cashew chicken with added heat from the gochujang! I just started experimenting with gochujang last year and I love it! It is on the spicier side, but I add some sweetness to it with some honey that makes it a D to the LISH sweet heat. You can find it in the international aisle of most grocery stores. The sauce is just a few ingredients that make the perfect bath for the chicken and veggies! Serve it over rice and cuddle up on the couch with your favorite bottle of wine and a movie!

Spicy Gochujang Cashew Chicken

Ingredients

  • *For the Chicken*

  • 1 lb 1 Boneless Skinless Chicken Thighs Cubed

  • 2 Tbsp 2 Avocado or Olive Oil

  • 1 Tbsp 1 Arrowroot Starch or Corn Starch

  • S&P to Taste

  • *For the Gochujang Sauce*

  • 1/4 cup 1/4 Gochujang Paste

  • 3 Tbsp 3 Rice Wine Vinegar

  • 2 Tbsp 2 Honey

  • 1 Tbsp 1 Soy Sauce or Coconut Aminos

  • 1/2 Tbsp 1/2 Sesame Oil

  • 1 1 Clove of Garlic

  • *Add Ins*

  • 2 Tbsp 2 Refined Sesame oil or olive oil

  • 1 1 Yellow Onion Diced

  • 3 3 Stalks of Celery Sliced

  • 2 2 Cloves of Minced Garlic

  • 1 cup 1 Carrots Sliced

  • 1 cup 1 Snap Peas

  • 1 1 Red Pepper Sliced

  • 1 can 1 Sliced Water Chestnuts

  • 1/2 cup 1/2 Cashews

Directions

  • To begin, add cubed chicken to a bowl or plastic zip lock bag and add oil, arrowroot starch and S&P. Massage to mix together and marinate in the fridge for at least 15 minutes or up to a couple of hours. Heat a skillet with refined sesame oil and add diced onion. Sauté until translucent, then add sliced celery and garlic
  • Add your chicken and brown on both sides
  • Add carrots, red pepper and snap peas. Mix together and sauté for a couple minutes
  • Mix together all ingredients for Gochujang sauce and add to skillet. Mix well. Add water chestnuts and mix in. Cover skillet with lid and turn to low. Simmer for 5 minutes to combine all the flavors
  • Stir in cashews and ladle in bowls with rice.
  • Time to DIVE IN!
