Salmon Shawarma Bowls

I love Shawarma! Anything Shawarma is right up my alley! I had some of my shawarma rub already made up from another recipe I made a few days ago, so I decided to make up some salmon shawarma bowls for dinner tonight. Monday nights are salmon night in this house. It’s the one night I don’t have to worry about what to make for dinner. We just know that every Monday, we’re having salmon of some kind. This recipe is sooo easy and fast to throw together! I worked all day but still had dinner on the table in 30 minutes thanks to the easy, oven method of roasting the salmon in just 15 minutes along with cooking the turmeric rice on the stovetop to a perfect fluff in just 20 minutes. Top these bowls with my tahini drizzle, pickled onions and fresh herbs and you have yourself the most D to the LISH weeknight option that everyone will love!

Ingredients

  • 1 1/2 lb 1 1/2 Salmon

  • 1 Tbsp 1 Olive Oil

  • *For the Shawarma Rub*

  • 1 tsp 1 Paprika

  • 1 tsp 1 Cumin

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Salt

  • 1/4 tsp 1/4 Cinnamon

  • 1/4 tsp 1/4 Cayenne

  • *For the Turmeric Rice*

  • 1 cup 1 Basmati or Jasmine Rice

  • 2 cups 2 Water

  • 1 Tbsp 1 Olive Oil

  • 1 tsp 1 Turmeric

  • 1/2 tsp 1/2 Garlic Powder

  • 1/2 tsp 1/2 Salt

  • *For the Tahini Drizzle*

  • 1/3 cup 1/3 Tahini

  • 1/4 cup 1/4 Warm Water

  • 1 1 Small Lemon, Juiced

  • 1 1 Garlic Clove, Minced

  • S&P to Taste

  • Herbs, Feta and Picked Red Onions for Garnish

Directions

  • To begin, preheat oven to 400. Remove skin from salmon and cube. Mix all ingredients for rub. Toss salmon cubes in olive oil and sprinkle rub on cubes. Toss well
  • On the stove top, add ingredients for rice in a small sauce pot. Stir well, bring to boil. Once boiling, cover with lid and turn to low. Set timer for 20 minutes
  • When your rice has cooked for 5 minutes, place salmon in the oven to roast for 15 minutes. Once your timer goes off, both your rice and salmon will be done and perfectly cooked
  • While salmon and rice are cooking, mix up your tahini drizzle. Once done, build your bowls by adding rice, salmon and topping with tahini drizzle, pickled red onions, feta and herbs. Enjoy!
