Caramelized Leek & Bacon Frittata with Smoked Cheddar Cheese

Let me help with this super easy and D to the LISH Frittata. I love a good frittata because the options are endless as to what you can do with them! I came up with this idea to use caramelized leek and bacon with some smoked cheddar and it was perfection! A cast iron skillet and 30 minutes in the oven is all you need to put this amazingness on your brunch table! Serve with a nice green salad and chilled glass of white wine and enjoy!

Ingredients

  • 1 1 Leek, Rinsed, Trimmed and Thinly Sliced

  • 2 oz 2 Cooked, Crumbled Bacon

  • 1 cup 1 Grated Smoked Cheddar Cheese

  • 8 8 Eggs Beaten

  • 1/4 cup 1/4 Heavy Cream

  • S&P to Taste

Directions

  • Preheat oven to 350, heat cast iron skillet on medium high. Add 2 Tbsp olive oil and thinly sliced leeks. Sauté until starting to brown nicely
  • Add cooked bacon and stir well
  • In a large glass measuring cup or large bowl, add eggs and cream. Whisk until combined, seasoning with S&P to taste
  • Pour eggs into skillet with leeks and bacon. Sprinkle smoked cheddar cheese on top and place in oven to bake for 30 minutes
  • Remove from oven, slice and serve!
