Salsa Verde Poached Cod Stew

I love creating super easy meals that take zero effort in the kitchen! We need options on those busy weeknights where you just don’t have time to make a big meal, but also don’t want to get trapped picking up fast food because of the time crunch. I have your answer with this flavor packed poached cod stew. It’s minimal ingredients and one of the easiest dinners I’ve ever created. I’m almost embarrassed to call this a recipe, that’s how easy it is. I start with one jar of medium salsa verde and add 2 cups of stock. I throw in a can of hominy and get a nice bubble on the skillet before I add my cod. It takes 5-8 minutes to poach and you’re ready to dive in! It doesn’t get any easier than this, my friends! Pair it with some fresh tortilla chips and guacamole! You can’t go wrong!

Ingredients

  • 1 lb 1 Cod Fillets

  • 16 oz 16 Jar Medium Salsa Verde

  • 2 cups 2 Vegetable Stock

  • 30 oz 30 Can of Hominy

  • 1 1 Lime Freshly Squeezed

  • *For the Toppers*

  • Angel Hair Cabbage

  • Sliced Raddish

  • Sliced Jalapeño

  • Sliced Green Onion

  • Cilantro

Directions

  • To begin, add salsa verde to your skillet with stock and hominy. Bring to a low boil and add your cod
  • Simmer cod for 5-8 minutes until it’s cooked through and flakes easily with a fork
  • Break up your cod into bite sized pieces and stir well
  • Add your freshly squeezed lime juice
  • Serve in bowls with your toppings and DIVE IN! I like to serve this with rice also. It’s D to the LISH!
