Thai Basil Turkey Stir Fry with Riced Carrots

I recently learned of a technique to rice carrots the same way we rice cauliflower and I absolutely loved the idea! I decided to create this easy and healthy stir fry skillet using riced carrots to bulk up the nutrients without adding additional carbs like noodles or rice. Let me be clear, I love some noodles and rice and I will never give them up completely, but when I am focused on a healthy journey, it’s better to come up with unique alternatives to my favorites. Riced carrots provide a great flavor and texture to this skillet and pair perfectly with the ground turkey, red pepper and purple cabbage. I love the subtle heat that the chili paste provides along with the freshness from the thai basil. This one takes minutes to throw together and would be a perfect weeknight option when you’re on the go!

Thai Basil Turkey Stir Fry with Riced Carrots

Ingredients

  • 2 Tbsp 2 Avocado Oil

  • 1 1 Yellow Onion Diced

  • 2 2 Cloves Garlic Minced

  • 4 4 Medium Carrots “Riced” in Food Processor *See Notes*

  • 1 lb 1 Ground Turkey

  • 1 1 Red Pepper Sliced

  • 2-3 cups 2-3 Purple Cabbage Sliced

  • 1/4 cup 1/4 Thai Basil Sliced

  • *For the Sauce*

  • 1/3 cup 1/3 Coconut Aminos or Soy Sauce

  • 2 Tbsp 2 Sambal Oelek

  • 1 Tbsp 1 Coconut Brown Sugar or Regular Brown Sugar

  • 1 tsp 1 Sesame Oil

  • 1 tsp 1 Fish Sauce(Optional but provides great umami flavor)

Directions

  • To begin, heat a skillet over medium/high heat and add avocado oil. Add diced onion and sauté until translucent.
  • Add riced carrots and sauté until they start to soften about 5-6 minutes
  • Add minced garlic and ground turkey. Sauté until turkey is cooked through
  • Add red pepper and thai basil. Stir well and sauté for a couple minutes
  • In a small prep bowl, add all ingredients for sauce and whisk to combine. Add to skillet and stir well to combine
  • Add purple cabbage and stir well. Place lid on and let cabbage wilt for 5-10 minutes. Ladle in bowls, top with your favorite herbs and DIVE IN!

Notes

  • If you don’t have a food processor, you can use a box grater and just grate your carrots. The texture will be a smidge different, but you’ll still get the same flavor and health benefits.
  • If you can’t find Thai basil, regular sweet basil would work just fine.
  • To rice your carrots, peel and cut them into 1-2″ slices and throw in your food processor with the regular blade attachment. Pulse until you have small bits of carrot that resemble the size of rice or riced cauliflower. Add riced carrot to a towel and squeeze out any excess water.
