The Smoke Stack Meatloaf

I have the most insanely D to the LISH meatloaf that you must try! This is not your normal, everyday meatloaf. I slow smoked this beauty on our pellet grill and I don’t know if I’ll ever make a meatloaf another way again. I caramelized some onions and mixed those in with ground chuck and ground pork along with some smoked cheddar cheese. I then made a smoked gouda cheese sauce to drizzle on top for another kick of smokey flavor and let me tell you….WHEW! This was a winner of a dinner! It was very easy to put together and a great idea when you want to get a head start on dinner for those busy nights or when you want to entertain and spend time with your guests. This one is a definite must try!

Ingredients

  • 2 lbs 2 80% Ground Chuck

  • 1 lb 1 Ground Pork

  • 1 1/2 cups 1 1/2 Freshly Grated Smoked Cheddar Cheese

  • 1 1 Large or 2 Small Sweet Onions Diced

  • 3/4 cup 3/4 Bread Crumb

  • 2/3 cup 2/3 Milk

  • 2 2 Eggs

  • 2 tsp 2 Italian Seasoning

  • 1 1/2 tsp 1 1/2 Salt

  • 1 1/2 tsp 1 1/2 Garlic Powder

  • 1 tsp 1 Black Pepper

  • *For the Smoked Gouda Cheese Sauce*

  • 1 cup 1 Heavy Cream

  • 1 1/2 cups 1 1/2 Freshly Grated Smoked Gouda

  • 1/4 tsp 1/4 Cayenne

  • Pinch of Salt

Directions

  • To begin, fill your hopper with pellets and preheat your smoker to 250
  • While your smoker is preheating, on the stovetop, add your diced onions with 2 Tbsp of butter to a preheated skillet and sauté until they begin to caramelize
  • In a large bowl, (I like to use a stand mixer, it’s easier to mix everything together) add your ground meat, onions, grated cheese, bread crumb, milk, eggs and seasonings. Mix well
  • Form into a loaf and place in a cast iron pan or loaf pan and place on smoker for approx 2.5 hours or until the internal temp reaches 165
  • When the meatloaf is done, pull to rest. Place a small sauce pot on the stove and add heavy cream. Add seasonings to cream and whisk while it’s heating. Add grated gouda and whisk as it melts in. Once melted completely, serve with meatloaf
