Harissa Honey Chicken Bowls

I have the perfect weeknight dinner idea for you when you want a D to the LISH option but don’t have a lot of time to put dinner on the table. Meet my Harissa honey chicken bowls. Where heat meets sweet! I take harissa paste and mix it with honey to coat the chicken and pair that with some toasted pine nut and mint couscous. Topped with avocado to add a nice smooth pairing with the spicy chicken and pickled red onion for an added tart crunch. It doesn’t get any better than this!

Harissa Honey Chicken Bowls

Ingredients

  • 1 lb 1 Boneless Skinless Chicken Breast, Cubed

  • 1 Tbsp 1 Olive Oil

  • *For the Spice Rub*

  • 1 tsp 1 Smoked Paprika

  • 1/2 tsp 1/2 Cumin

  • 1/2 tsp 1/2 Garlic Powder

  • 1/2 tsp 1/2 Onion Powder

  • 1/2 tsp 1/2 Salt

  • 1/4 tsp 1/4 Pepper

  • *For the Harissa Honey Sauce*

  • 1/4 cup 1/4 Honey

  • 2 Tbsp 2 Harissa Paste

  • *Toasted Pine Nut & Mint Couscous*

  • 1 cup 1 Couscous

  • 1 cup 1 Water

  • Salt to Taste

  • 1 Tbsp 1 Olive Oil

  • 1/2 cup 1/2 Pine Nuts

  • 2 Tbsp 2 Fresh Mint Chopped

  • Pickled Red Onion*See Notes* Avocado to top

Directions

  • To begin, preheat oven to 400. Mix spice rub together in a small prep bowl. Cube chicken, toss in olive oil and coat in spice rub. Spread seasoned, cubed chicken on a sheet tray and roast in the oven for 10 minutes
  • While chicken is roasting, toast pine nuts in a small fry pan over medium heat until just starting to brown and release fragrance. Add water to a small sauce pot with salt. Once boiling, add couscous, remove from heat, cover and let sit for 5 minutes. Once 5 minutes is up, remove lid, fluff with fork and add pine nuts and chopped mint. Stir well and set aside until you’re ready to build bowls
  • In a small prep bowl, add honey and harissa paste. Stir well. Once 10 minutes is up, remove chicken from oven and brush the honey harissa sauce all over chicken. Ensure all pieces are coated well. Place sheet tray back in oven for 5 minutes to allow the chicken to finish cooking in the sauce
  • To build bowls, add couscous and chicken to bowls. Top with fresh herbs, cubed avocado and pickled red onion. It’s time to DIVE IN!

Notes

  • You can sub white or brown rice in these bowls if you’d rather have rice
