Buffalo Chicken Tater Tot Casserole

I will always try and find ways to enjoy good, game day food! This is such a great option when you have a party planned when your favorite team is taking the field! This casserole will feed an army. It has all the things you want in a game day casserole! The perfect amount of heat with the hot sauce and fire roasted tomatoes. Loaded with chicken and sprinkled with blue cheese and colby cheese, then topped with tater tots! What’s not to love! It comes together in a flash and is a D to the LISH option to entertain with. Buffalo Chicken Tater Tot Casserole

Ingredients

  • 2 lbs 2 Ground Chicken

  • 1 1 Small Yellow Onion

  • 1 cup 1 Grated Carrot

  • 3 3 Stalks Celery Sliced

  • 12 oz 12 Frozen Corn

  • 15 oz 15 Fire Roasted Tomatoes

  • 1 cup 1 Hot Sauce such as Frank’s Red Hot

  • 1/2 cup 1/2 Cream Cheese

  • 2 Tbsp 2 Ranch Seasoning

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Salt

  • 1/2 tsp 1/2 Pepper

  • 2 tsp 2 Oregano

  • 8 oz 8 Shredded Cheddar Cheese

  • 1/4 cup 1/4 Blue Cheese Crumbles

  • 32 oz 32 Tater Tots

  • Green Onion for Garnish

Directions

  • To begin, add olive oil to your skillet and add diced onion. Sauté until translucent, then add celery. Sauté for a couple minutes
  • Add ground chicken and season with Salt, Pepper, Garlic Powder and Oregano. Sauté until browned
  • Add grated carrot, fire roasted tomatoes, hot sauce, cream cheese and ranch seasoning. Stir all together
  • Add corn to skillet. Stir well, place lid on and simmer while oven preheats to 350.
  • Add contents of skillet to 13×9 casserole dish, sprinkle cheddar cheese and blue cheese on top. Top with tater tots and bake for 30 minutes. Remove and garnish with green onions. Ladle in bowls and enjoy with a nice side salad!
