Lavender Blueberry Skillet Coffee Cake

I had some blueberries in the fridge that just weren’t sweet enough for me to eat by themselves, but they were perfectly acceptable for a coffee cake, so I decided to develop an easy skillet coffee cake that was sooo good! This coffee cake was easy to mix up and tasted amazing with the subtle hint of lavender infused in the milk and the bright lemon zest crumble baked on top! Call your friends over for brunch and this beautiful skillet cake will be the star of your table!

Ingredients

  • 1/2 cup 1/2 Butter, Softened

  • 3/4 cup 3/4 Milk

  • 1 Tbsp 1 Culinary Lavender

  • 1 1 Egg

  • 3/4 cups 3/4 Granulated Sugar

  • 2 cups 2 Flour

  • 2 1/2 tsp 2 1/2 Baking Powder

  • 1/2 tsp 1/2 Salt

  • 2 cups 2 Fresh Blueberries

  • *For the Crumble*

  • 1/2 cup 1/2 Granulated Sugar

  • 1/3 cup 1/3 Flour

  • 1/4 cup 1/4 Softened Butter

  • 1 1 Lemon, Zested

Directions

  • To begin, add milk and culinary lavender in a small sauce pot over medium heat. Bring milk to simmer for about 3-5 minutes. Remove from heat and steep for 20-30 minutes. Strain lavender buds out after steeping is complete. (Lavender is not everyone’s cup of tea, just a note, this is very subtle, but if lavender is a hard no for you, just omit. It will still be D to the LISH)
  • Preheat oven to 375. In a mixing bowl, add softened butter, infused milk, egg and sugar. Beat until smooth
  • In another bowl, add flour, baking powder and salt. Whisk to combine
  • Add wet ingredients to dry ingredients and stir well. Gently fold in blueberries
  • Spray an 8-10″ skillet with nonstick cooking spray and add batter to skillet
  • In a small mixing bowl, add butter, sugar, flour and lemon zest. Crumble together until butter breaks down and sprinkle crumble on top of coffee cake
  • Place cake in the oven and bake for 45-50 minutes until a toothpick inserted in the center comes out with minimal crumbs on it. Pull and allow to cool for 15 minutes before you cut into it. Serve with your favorite coffee or hot tea and enjoy!

Notes

  • You could also bake this in an 8×8 pan as well.
