Grilled Cajun Shrimp & Scallops

I have spent the last week digging through my freezer and pantry finding dinner ideas that don’t require me to have to run to the grocery store. I found 2 bags of frozen shrimp and scallops in the back of my freezer and I knew exactly what I wanted to do with them. These grilled shrimp and scallops are sooo easy! I just sprinkled some cajun seasoning on them and skewered them. I grilled them on the charcoal grill basting in butter as they cooked up. I paired them with the perfect filet mignon for a super easy surf n turf style dinner! Give these a try today! They are D to the LISH with some fresh lemon squeezed on top!

Ingredients

  • 1 1 Bag Frozen Sea Scallops

  • 1 1 Bag Frozen Jumbo Shrimp, Peeled & Deveined

  • 1 Tbsp 1 Cajun Seasoning

  • 1/4 cup 1/4 Melted Butter

  • Fresh Parsley and Lemon Wedges for Garnish

Directions

  • To begin, thaw your seafood in a colander under cold running water until completely thawed
  • Pat dry and thread onto skewers. If using wooden skewers, soak them for 30 minutes before you prepare your seafood
  • Sprinkle cajun seasoning on shrimp and scallops
  • Place seafood skewers on a preheated charcoal or gas grill with oiled grates. Grill scallops about 4-5 minutes per side or until cooked through. Grill shrimp about 2 minutes per side, just until cooked through. Baste melted butter on seafood as you are grilling to provide more flavor and good char
  • Serve with lemon wedges and fresh parsley. You can even grill the lemon which helps express the juice.
