This is one of the easiest salads I have ever made and my inspiration comes from my good friend, Gladys. She had me over for lunch before a fun day of wine tasting in California, and she served me a version of this salad that she had at a restaurant. I sat in her beautiful kitchen watching her make me this salad and I will never forget my first bite! I was in awe of the combination of flavors from the manchego cheese that paired with the granny smith apple and cilantro. The crunch of the sliced almonds is the chefs kiss that finishes this salad off just right! I made up my own version of a dressing that pairs with the flavors in this salad perfectly! You can add grilled salmon or chicken if you wanted to make this a meal with the added protein. This would also make a great salad to serve at your next brunch!
