Smoked Strawberry Crisp

I had this idea to make a strawberry crisp and I thought how fun it would be to smoke it on our pellet grill. It turned out better than I could have imagined! This was so easy to put together and the flavor was out of this world! I have never had a strawberry crisp before and I can tell you that I will be making this dessert on repeat. It’s definitely at the top of my list for favorite crisp recipes. Carl gave it his vote of approval also. I used my new Staub Pink Peony skillet that was just released at the beginning of April and it was the perfect pan to showcase the gorgeous strawberries! Serve it with a scoop of ice cream and ENJOY!

Ingredients

  • *For the Bottom Berry Layer*

  • 5 cups 5 Sliced Strawberries

  • 1/3 cup 1/3 Granulated Sugar

  • 3 Tbsp 3 Corn Starch or Arrowroot Starch

  • *For the Crisp Topping*

  • 1 cup 1 Rolled Oats

  • 3/4 cup 3/4 All Purpose Flour

  • 3/4 cup 3/4 Brown Sugar

  • 1/4 cup 1/4 Granulated Sugar

  • 1/2 tsp 1/2 Salt

  • 1/2 cup 1/2 Softened Butter

Directions

  • To begin, preheat your pellet smoker or oven to 350
  • Slice berries and place in large bowl with sugar and corn starch. Stir well and add to 8-10″ cast iron skillet or 8″ baking pan
  • In a mixing bowl, add all ingredients for crisp topping. Using a pastry cutter, cut in the butter until smaller pieces form. Sprinkle topping on berries
  • Place on pellet smoker or in oven for 45-50 minutes, until it’s bubbling and starting to brown
  • Serve with a scoop of ice cream and ENJOY!
