Chicken Cordon Bleu Meatballs

Just when you thought, there is no way Ang can come up with another meatball idea….here I come, with another meatball idea!! LOL! I often get the question, “How do you create your recipes?” For me, it happens in the most unique places. While I’m flying or driving are some of the biggest places where I have my creative moments. This particular recipe idea birthed while I was standing at gate C31 at DFW patiently waiting to board a flight to Denver that ended up leaving 7 hours later! While standing in that line, it just came to me! Chicken Cordon Bleu Meatballs. I immediately opened the notes section of my phone and got to typing all the things that were swimming around up in my noggin. Ham, Swiss, some kind of cheesy cordon bleu sauce for them to bathe in. It all came to me in 5 minutes. I will tell you these meatballs DID NOT disappoint OMG! The flavors were out of this world D to the LISH! These are a fun take on the traditional chicken cordon bleu dish and would be a really fun main course to host a dinner party with! With just a few simple ingredients, and 20 minutes, you can transport yourselves to flavor town and enjoy them too!

Chicken Cordon Bleu Meatballs

Ingredients

  • *For the Meatballs*

  • 1 lb 1 Ground Chicken

  • 5 oz 5 Diced Ham

  • 1 cup 1 Shredded Swiss Cheese

  • 1/4 cup 1/4 Panko Bread Crumbs

  • 1 1 Egg

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Onion Powder

  • 1/2 tsp 1/2 Salt

  • 1 tsp 1 Dried Thyme

  • *For the Cheesy Cordon Bleu Sauce*

  • 2 Tbsp 2 Butter

  • 2 Tbsp 2 Flour

  • 1 cup 1 Milk

  • 1/2 cup 1/2 Parmesan Cheese

  • 1 Tbsp 1 Dijon Mustard

  • 2 tsp 2 Worcestershire Sauce

  • 1 tsp 1 Dried Thyme

Directions

  • To begin, using a box grater, grate your block of swiss cheese until you reach 1 cup
  • Add remaining ingredients for meatballs into large bowl and mix well. Add swiss cheese and mix well. Form into balls. Bake in a preheated 400 degree oven for 20 minutes or until a thermometer reads 165. Recipe yields 12
  • While meatballs are baking, add butter and flour to a saucepot and whisk well until combined. Add milk and whisk well until your mixture starts to thicken
  • Add Dijon, Worcestershire Sauce and Thyme. Whisk well. Add Parmesan Cheese and whisk until well blended and you’ve reached the desired consistency you want. For a thinner sauce, add more milk
  • Plate the meatballs and pour your cheesy cordon bleu sauce on top. These are perfect paired with mashed potatoes and nice salad to round out the meal!
