Buffalo Chicken Chili Loaded Baked Potatoes with Blue Cheese Cream

I love some good football food! This is the perfect choice on football Sunday now that the temps have dropped and we have that sweatshirt chill in the air! I’m always trying to come up with new ways to enjoy buffalo chicken. This creation turned out perfect! The tender baked potato was the perfect boat for the D to the LISH buffalo chicken chili to nestle in and the blue cheese cream topper was the most amazing finishing touch! Add these to your next game day menu and you’ll definitely be adding them to your repeat list.

Buffalo Chicken Chili Loaded Baked Potatoes with Blue Cheese Cream

Ingredients

  • 4 4 Medium Russet Potatoes

  • 1 Tbsp 1 Olive Oil

  • Sea Salt to taste

  • *For the Buffalo Chicken Chili*

  • 1 lb 1 Ground Chicken

  • 1 1 Small Yellow Onion Diced

  • 3 3 Carrots Grated

  • 3 3 Stalks of Celery Sliced

  • 2 2 Cloves of Garlic Minced

  • 1 tsp 1 Oregano

  • S&P to taste

  • 14.5 oz 14.5 Fire Roasted Diced Tomatoes

  • 1/2 cup 1/2 Franks Red Hot

  • 1 cup 1 Chicken Stock

  • *For the Blue Cheese Cream*

  • 1/3 cup 1/3 Whipped Cream Cheese

  • 1/3 cup 1/3 Greek Yogurt

  • 1/4 cup 1/4 Blue Cheese

  • 2 Tbsp 2 Milk

  • 1/2 tsp 1/2 Worcestershire Sauce

  • *Potato Toppers; Green Onion, Blue Cheese Crumbles, Shredded Cheddar Cheese*

Directions

  • To begin, scrub your potatoes and dry with paper towel. Using a knife, stab your potato on all sides and brush with olive oil. Salt with sea salt and wrap potatoes. Place on a sheet tray and bake in a 425 degree oven for 60 minutes or until tender
  • While Potatoes are in the oven, heat skillet with 2 Tbsp olive oil and add diced onion to the pan. Sauté until translucent. Add garlic along with celery and carrot. Sauté until it starts to soften
  • Add ground chicken and season with oregano and S&P. Sauté until browned
  • Once chicken is browned, add diced tomatoes and hot sauce. Mix well and bring chili to simmer. Cover and simmer until potatoes are done
  • Place ingredients for blue cheese cream in a high powered blender and blend until smooth
  • To build potatoes, slice potato open and fill with chili. Top with cheddar cheese, blue cheese cream, blue cheese crumbles and green onions. It’s time to DIVE IN!
