Southwest Skillet Corn

I came up with this super easy skillet dish for a dinner we hosted recently. It was so quick to throw together and with simple ingredients, it’s one that I will make again for sure! I start with combining some hot honey with butter and melt it in an 8-10″skillet before adding a bag of frozen, roasted corn. I add some cumin for additional flavor and some cream cheese and cotija cheese for a creamy addition. This is like dessert in a skillet and the perfect side for those spicy southwestern dishes you have on the table!

Ingredients

  • 16 oz 16 Bag of Frozen Roasted Corn

  • 2 Tbsp 2 Salted Butter

  • 2 Tbsp 2 Hot Honey

  • 1/4 cup 1/4 Cream Cheese

  • 1/4 cup 1/4 Cotija Cheese

  • 1-2 Tbsp 1-2 Chopped Cilantro

  • 1 tsp 1 Cumin

  • S&P to taste

  • 1 1 Small Lime Juiced

Directions

  • To begin, add butter and hot honey to your skillet and melt together
  • Stir your corn in and mix well. Add your cumin and let corn warm through. 5-8 minutes
  • Once corn is heated through, add cream cheese and cotija cheese. Mix well
  • To finish, stir in lime juice and chopped cilantro. Top with a sprinkle of more cotija cheese, cilantro, green onion, lime and even avocado if you wanted. It’s time to DIVE IN!
