30 Minute Summer Squash Pasta

I’m always coming up with new ways to serve a bowl of pasta! I love a good pasta dinner after a long day! There is something so comforting about noodles and a red sauce loaded with goodies! This dinner was a simple creation based off of ingredients I had in my pantry and fridge that needed to get used. A lot of times, that’s how my best meals are created! What I loved most about how this recipe turned out, was how amazing the sauce tasted! It tasted like I slow simmered it all day on the stove and I only simmered it for less than 30 minutes! It is the perfect stove top to table ready option on those busy days when you don’t have a lot of time or when you want to impress your friends with a homemade Italian dinner! Serve this with a nice glass of Chianti and some crusty garlic bread and you’ll have yourself the most D to the LISH dinner! Enjoy!

Ingredients

  • 1 lb 1 Ground Pork & Beef Combo

  • 1 1 Shallot

  • 1 1 Zucchini Squash

  • 1 1 Summer Squash

  • *For the Marinara*

  • 28 oz 28 Crushed Tomatoes

  • 4 oz 4 Tomato Paste

  • 1/2 cup 1/2 Dry Red Wine(Like Cabernet)

  • 1 tsp 1 Garlic Powder

  • 1 tsp 1 Salt

  • 2 tsp 2 Italian Seasoning

  • 1/2 tsp 1/2 Cinnamon

  • 1 Tbsp 1 Sugar

  • 1/2 tsp 1/2 Crushed Red Pepper

  • 1/2 cup 1/2 Freshly Grated Parmesan Cheese

  • 1/4 cup 1/4 Chopped Fresh Basil

Directions

  • To begin, in a skillet on medium/high, sauté your diced shallots with a drizzle of olive oil, then add your ground meat
  • Sauté meat until browned and add red wine. Simmer for 3 minutes
  • Add remaining marinara ingredients through the crushed red pepper and stir well
  • Slice squash and add to skillet. Stir well and cover. Turn to medium/low and simmer until squash is tender
  • Add freshly grated parmesan cheese and basil. Stir well. Serve over your favorite pasta and enjoy!

Notes

  • Any ground meat would work with this recipe. I liked the combo ground pork and beef in this recipe.
