Dilly Red Skin Potato Salad

I love coming up with new ways to make potato salad. My favorite time of year is BBQ time! There is nothing better than eating off of paper plates and piling them up with all the sides that we love so much! This potato salad was so easy to throw together! I started by cooking up redskins and mixing up a simple dressing along with some celery, onion and the star of the show, fresh dill! There is a freshness to dill that is the perfect addition to this salad and makes the ultimate side for all your picnics you have planned this Summer! Whip up a batch today and DIVE IN!

Dilly Red Skin Potato Salad

Ingredients

  • 2 lbs 2 Red Skin Potatoes Cubed

  • 1/2 cup 1/2 Mayonnaise

  • 1/2 cup 1/2 Sour Cream

  • 1 Tbsp 1 Apple Cider Vinegar

  • 1 Tbsp 1 Sugar

  • 1/2 1/2 Sweet Onion Diced

  • 2 2 Stalks Celery Sliced

  • 1/4 cup 1/4 Fresh Dill Chopped

  • S&P to taste

Directions

  • To begin, cube your potatoes and boil until fork tender. While potatoes are cooking, add mayo, sour cream, vinegar and sugar to bowl. Whisk well to combine
  • Add onion, celery, dill and S&P
  • Mix well to combine
  • Add cooked potatoes to your dressing mix and stir well to combine
  • Place in serving bowl and chill until ready to serve
