I will never forget where I was when I sank my teeth into the most D to the LISH breakfast EVER! We were celebrating Christmas morning with Carl’s mom Joan in the Texas Hill Country. She wanted to cook us one of her go to breakfasts and I’ve been smitten ever since! I can’t count how many times I’ve made this delectable goodness for myself and for company! It’s one of my favorite brunch menu items to introduce my guests to because once they taste the magic that is built on top of that bread, they are speechless just like I was! The key to this perfect toast is marrying sweet and savory together. I start by toasting up some special jalapeño cheddar bread for some heat. I then slather some strawberry jam on top of the bread followed by some mashed avocado with a hint of salt and lime. I sprinkle some everything bagel seasoning on top of that for a little more kick and top with a poached egg. Believe me when I tell you that you will be making these on repeat once you try your first one! It’s the perfect addition to your Mother’s Day brunch menus this year!
